Cake Off

OK, I've launched my cake bake-off. So far I've baked two cakes...leading up to my birthday. The first cake is from scratch: Peanut Butter Cake with peanut butter and orange marmalade filling and vanilla butter cream frosting. Secret ingredient is Jamaican Allspice in cake and frosting. Cake was a bit dry and hardly tasted of peanut butter. Could have used more of the filling. Overall, a 3 on 1-5 scale. I decided to use a Betty Crocker Devil's Food mix for this cake, even though I had intended to use a "dump cake" recipe. The cake is very moist and tastes good. I added vanilla and a bit of Starbucks instant coffee to the mix. The filling is mocha butter cream. Glaze is chocolate ganache. Cake is more moist than my scratch cake. All of the chocolate may be overkill. I would give this 4 stars. IF I decide to make one last cake, I think it will be a lite Hummingbird Cake. That recipe calls for crushed pineapple and bananas. Mind you, I'm not eating much of these cakes. I just enjoy baking them and having a sliver now and again. HA!

Cakes from scratch are such a treat. I do them sometimes, but more often add to mixes. I squealed out load when I saw the beautiful nasturtiums on top. I can't grow those to save my life. They looked especially pretty on the second one.....the orange was really set off by that deep, dark ganache. Bob is a lucky, lucky man to have such experiments lurking in the fridge!

Hi. So glad you stopped by to check out my cakes. I used restraint and stopped at 2 cakes. There are 2 slices of the chocolate left that Sis and I will have today for lunch. I love nasturtiams, too. I am quite proud that my seeds grew into pretty plants. Secret is to soak the seeds in water for couple days before planting. Well, that and they also do best in a coolish climate, I think. PC repair lady just arrived!

Oh my; the cakes look quite yummy. I chatted with Susie this morning and she thought it was your birthday today.So....a very Happy Birthday to you! Perhaps your computer will be back in working order for your big day. Is that wishful thinking?
