Chicken with Shallots

A few days ago I came upon a recipe for Chicken with Caramelized Shallots from David Lebovitz. Last night I made it, along with smashed potatoes and spinach sauteed with garlic and fresh ginger. I would call it a hearty, earthy dish, pretty easy to prepare. The roasted chicken and shallots produced a nice au jus for the potatoes. David's blog is entertaining and informative. He is an American living in Paris and writing about the experience. I think he was a pastry chef at Chez Panisse years ago. I met him when he taught a class on chocolate for Sur la Table.

Oh goodie----a new post just popped up as I was catching up on your blog. This looks delish----I like the idea of ginger with spinach. I've never tried that combination.

And this is such a nice presentation for St. Patty's Day---it's so .... Irish looking.
