
I enjoy cooking dinner nightly, but I must admit that I prepare the same recipes over and over. But why, when I have some great cookbooks and the
Internet is full of inspiration? That's right, there is no reason for not venturing out. I resolved to try something different and a recipe appeared: Grilled Scallops Wrapped with
Pancetta. I grated
Meyer lemon and ginger, smashed garlic, marinated...then realized my scallops were falling apart and wouldn't stand up to being skewered and grilled. So...deconstruct. Good and easy.

Craving chocolate today, I retrieved a recipe I'd clipped for a chocolate lava cake.
Hmmm, a stick of butter and 3 eggs, plus sugar and chocolate. That's pretty rich. Instead I reached for my standby cookbook, Betty
Crocker. There was an old-school cooked pudding that used only 1 egg and 2 TBS butter, plus the chocolate,
a'course. I can't remember the last time I cooked pudding from scratch. I fear I've created a monster as my husband really liked it. Garrett, however, gives
Yoplait's Frozen Smoothies a higher score. I'm saved from kitchen slavery.

Well I love scallops and your dinner looks awesome!! And cooked pudding, especially chocolate, oh my!! I have died and gone to heaven for sure. I love love love it!!
