Because we have 3 family birthdays in May, plus Mother's Day, I decided to make a couple new recipes for the party we hosted. Starting with CAKE, I made a faux swiss meringue buttercream using marshmallow fluff, butter and a bit of powdered sugar. It turned out really good. The recipe came from Better Home & Garden Magazine. That black drippy stuff is cherry preserves used as filling. The cake was cold before I put it on...honest.
A bit more ambitious was a roasted carrot, orange and avocado salad. There were a number of steps for this, using lots of spices. An easy-breezy recipe was the cashew roasted cauliflower, using cashew butter. Both of these were good and qualify for repeat. It was a beautiful day and a good time was had by all. Well, almost all. The only odd moment during the party was when my husband seriously threatened all the guests with "Who took an extra portion of steak? Was it you? Give that back." OMG. Ugly and embarassing and I guess I'll get over it??

The cake looked scrumptious. Does cake ever NOT look scrumptious? Or is that spelled scrumptuous? Or scrumdiddlyumptious?
